This week our chef, Lillian Elidah prepares a yummy and filling breakfast favourite with a Golden Goodness Soya twist… the healthy Spinach Omlette!

Cooks 2 portions.

Cup of Golden Goodness Soya Pieces
100g fresh spinach (not cooked) or 50g cooked
1 onion finely chopped
4 eggs
Salt and pepper to taste
3 tbsp oil

1.Wash your uncooked spinach and set aside for later use.
2. Heat up a medium pot, add the washed spinach and stir until it starts to wilt. You can remove any excess liquid from the spinach and set aside.
3.Heat up a medium pan with sun soya oil, add the whisked eggs until it covers the pan.
4. Add the spinach, soya pieces and onions on top of the egg mixture.
5. Season with salt and pepper to taste.
6. Using a spatula lift half of the omletter and fold the omlette half way.
7. Cook for 30 seconds and serve.
